Cheesecake is one of those desserts that everyone seems to love. There are so many great types of cheesecake and so many ways in which to make it as well- its a classy dessert that can be rich and complex while being fun and trendy at the same time.
I totally love yummy Halloween cakes, and this pumpkin cheesecake is so fun too- while this recipe is not the easiest, it is definitely one of the best! You can spook it up by adding some cobweb piping, fake spiders, or make it creepy with worms coming out of the crumbly crust- have some fun decorating with just about anything you like.
1 3/4 cups chocolate wafer crumbs
1/4 cup butter or margarine, melted
3 (8 ounce) packages cream cheese, softened
3/4 cup sugar
1/2 cup packed brown sugar
1 (15 ounce) can solid pack pumpkin
2 tablespoons cornstarch
3 teaspoons vanilla extract
1 1/2 teaspoons pumpkin pie spice
2 cups sour cream
3 tablespoons sugar
2 teaspoons vanilla extract

Smash up the wafer crumbs and butter and press into bottom of and sides of your greased spring form pan to create your cheesecake crust. In a big mixing bowl beat the cream cheese and sugars until nice and smooth. Add in the eggs and beat on low speed. Whisk in the pumpkin, cornstarch, vanilla, and pumpkin pie spice. Pour mixture into the crust and bake at 350 degrees F for 1 hour. Cool for at least 10 minutes before doing anything else to the cheesecake, but don’t turn off the oven just yet. Mix up the topping ingredients’ and spread this over the top of the cake. Place back in the oven for 6 minutes to melt. Run a butter knife around the edge of the pan first to loosen everything to make release easier later on. Allow to cool at room temp and refrigerate over night.
When you are ready to create your master piece, remove the cheesecake from the pan and pipe on spider web decorations. If you need a good cheesecake pan- I recommend the Calphalon Nonstick Springform Pan. You can place a candy spider in each little web or add fun plastic toys for a really creepy look. If you are not a baker, you can buy one of those no-bake cheesecakes and decorate it just the same and no one would be the wiser!
